Orange Frosted Sugar Cookies

1 cup butter softened

1 cup vegetable oil

1 cup sugar

1 cup powdered sugar

2 eggs

2 tsp vanilla extract

zest of one orange

4 1/2 cups flour

1 tsp baking soda

1 tsp cream of tartar

For icing:

1 large orange zested

1 large orange squeeze for juice

4 T butter melted

4 cups powdered sugar

Beat the butter, oil, and sugars until combined.

Beat in eggs, vanilla, and orange zest.

In a separate bowl, whisk together flour, baking soda, and cream of tartar.

Add dry mixture (1/2 cup at a time) to the butter mixture, beating until combined. Don't overmix.

Use baking sheets with parchment paper and drop dough by spoonful.

Bake at 375 for 8-11 minutes, or until edges are lightly browned.

Cool on wire racks.

Icing:

Whisk together all ingredients until smooth. Add more powdered sugar, as needed. Icing should be spreadable but not runny.

Spread over cookies. Set frosting for 15 minutes.
