Crockpot Scalloped Potatoes

2pounds potatoes, peeled and sliced (original recipe said 10...there's no way 10 pounds of potatoes are fitting in my crockpot so I used as much as I knew would suit my family)
1large onion, diced
16slices thick cut bacon, uncooked and diced
4cups shredded taco blend cheese
28 oz can cream of chicken soup

Place half of the sliced potatoes in the bottom of crock. ~Top with half of onion, cheese and bacon. ~Repeat layers. ~Top with cream of chicken soup. ~Cook on low of 8 to 10 hours

Crockpot Applesauce

15-20 apples, peeled, cored and cut to fill a large crockpot Use a variety of apples
1 strips of lemon peel - use a vegetable peeler
1 tsp fresh lemon juice
3 inch cinnamon stick
5 tsp light brown sugar

1. Peel, core and chop the apples.

2. Add the sugar, lemon peel, lemon juice and cinnamon stick.

3. Set crock pot to low and cook for 6 hours. Stir apples occasionally, apples will slowly become a delicious applesauce. Remove cinnamon stick and use an immersion blender to blend until smooth or if you prefer a chunky sauce, leave sauce intact. (I used a whisk, which gave the sauce a nice chunky consistency.)

4.  Keep refrigerated up to 3 weeks.

Take out chicken and shred up with a fork. Drain water out of crockpot and put chicken back in. Cover chicken with onion, green chilies, tomatoes and a little more garlic powder. Put a tiny bit of water so the bottom isn't dry. Sprinkle about a Tablespoon of taco seasoning over the mixture and stir all together. Cook on low for another couple of hours.
