Brysons Sugar Cookies

1 pound Butter (softened)
3 Eggs
2 cups Sugar
2 tsp Vanilla
2 tsp Lemon Extract
6 Cups Flour
1 tsp Soda
1 tsp Salt

Use Betty Crocker Lemon Frosting

Cream Sugar and Butter, add eggs, vanilla, lemon.  Mix well.  Add Dry ingredients.  Refridegerate for at least 1 hour.  Roll out, cut bake 375 degrees for 8-10 minutes.  let Cool completely.  Frost

KETO bread

1 1/2 cup Almond Flour
6 large Eggs, Seperated
4 T Butter, melted
1 T Baking Powder
1/4 tsp Cream of Tartar
Pinch of Salt

Whip egg whites until peaks form, add cream of tartar.  In food processor mix egg yolks, almond flour, baking powder, butter and salt.

Add 1/3 Whites process until mixes, lightly fold in the remaining 2/3 of whites with a spatula.
Long loaf pan bake at 375 degrees for 20-30 minutes

Low Carb Bread

12 slices is 2-3 carbs

1 1/2 cup Almond Flour (I get mine on Amazon)
6 Large Eggs, separated
4 T Butter, Melted
1 T Baking Powder
1/4 tsp Cream of Tartar
Pinch of Salt

Preheat the oven to 375 degrees.
Take Egg Whites and whip them with the Cream of Tartar in a mixer until soft peaks form.
In a food processor add Egg Yolks, Almond flour, butter, Baking Powder and Salt, mix until combined.  It will be a lumpy thick dough until the whites are added.

Add 1/3 of the Egg white fluff, mix until combined.  GENTLY add the remaining Egg fluff until just combined.  You don't want to over mix it as this is what gives the bread it's volume.\

Bake for 20-30 minutes depending on the bread pan you use.  I use my french loaf pan, it longer and thinner than a regular pan and it cooks in around 30 minutes.  The toothpick test is how to tel if its done.

I like this bread for french toast (top with berries and cream), sandwiches, grilled cheese. eat with just butter or cream cheese.  It's nice to have a bread option for low carb.

Meatloaf

1 1/2 - 2 lbs. ground beef
1 c. crushed corn flakes
1/2 c. chopped celery (chop very fine)
1 tsp. salt
1/4 tsp. pepper
2 eggs
1-2 T.  Worcestershire  Sauce
1/2 c. chopped onion (chopped very fine)
1 (8 oz.) can tomato sauce
1/4 c. milk

Beat eggs with fork, fold in ground meat and stir together. Add corn flakes, onion, celery, tomato sauce, salt and pepper. Add milk and blend with fork. Mix with hands and form into a loaf. Mixture should be slightly firm. Put into loaf pan and spread even with hands. Bake at 375 degrees for 1 1/2 hours.

Avacodo Deviled Eggs

  • 6 hard boiled eggs, peeled and cut lengthwise
  • 1 ripe avocado, pitted and peeled
  • 1 tbsp fresh lime juice
  • 1/4 tsp salt
  • 1/4 tsp onion powder
  • 1 tsp Gourmet Garden Garlic (or 1 tsp minced garlic)
  • 2 tsp Gourmet Garden Cilantro (or 2 tsp finely chopped cilantro)
  • Smoked Paprika
  •  
    1. Remove egg yolks from the halved eggs and place in a small bowl. Add the ripe avocado, lime juice, salt, onion powder, garlic and cilantro.
    2. Use a fork to mash the guacamole mixture until smooth.
    3. Spoon (or use a frosting bag to pipe) the mixture into the halved eggs. Sprinkle with a dash of smoked paprika.
    4. Keep stored in an airtight container for up to 2 days.
    5. Enjoy!

    Marshmallow Frosting

    Ingredients:
    4 large egg whites
    1 Cup ordinary sugar (white or brown)
    1 pinch of salt
    1 tsp vanilla essence
    Place all ingredients except the vanilla essence into a bowl which you can place over a pot of simmering water, or use a double boiler.
    Whisk the egg white mixture constantly over simmering water until the sugar dissolves and the mixture is hot to the touch.  About 5 min.
    Pour the mixture into a bigger bowl and beat with an electric mixer for 3 minutes. Add the vanilla while beating. After 3 minutes, the mixture will be lovely and fluffy.
    Bosch or Kitchen Aid mixer works well.
    I love using disposable piping bags – or you could even use a plastic bag without a nozzle, I simply piped straight out the end of the piping bag directly onto the cupcakes.

    Night before French Toast Casserole

    Ingredients
    1 10 oz long thin French toast bread, sliced
    1/3 tsp Salt
    8 large Eggs
    1 T Vanilla
    3 Cups Milk
    4 tsp Sugar
    Cinnamon & Sugar Mix

    Directions
    Grease 9 x 13 baking pan with butter. Arrange bread slices in one layer in pan. Beat together eggs, milk, sugar, salt and vanilla; pour over bread. Cover and refrigerate overnight.
    To Bake, Remove cover, dot with butter and sprinkle with cinnamon and sugar. Bake in preheated 350 degree oven for 45-50 minutes. Or until bread is bubbly and browned
    Remove from oven and let stand 5 minutes. Serve with syrup, yogurt or sour cream and fresh fruit!

    Cinnamon French Toast

    Ingredients
    3 Eggs
    1/2 tsp Ground Cinnamon
    1/4 Cup Milk
    1/8 tsp Ground Nutmeg
    1/2 tsp Vanilla Extract
    8 1 inch thick slices of French Bread

    Directions
    Using a wire whisk beat the egg and egg whites until foamy. Add the milk, vanilla, cinnamon and nutmeg. Beat well and set aside.
    Preheat oven to 200 degrees. Lightly grease a skillet over medium heat dip 4 of the bread slices into the egg mix, turning to coat and drain. Place bread slices in skilled cook until golden brown, turn once.
    Transfer to warm oven while you cook remaining toast. Repeat until all bread has been cooked. Serve with maple syrup, jams, cream, cinnamon, powdered sugar. YUMMY!

    Ham Fried Rice

    Ingredients
    1 Pkg Cooked Rice (white or wheat)
    1/2 Cup Peas (if desired)
    1 Cup Ham cut or cubed
    LITE Soy Sauce to taste
    1 bunch green onions
    4-6 Eggs
    1-2 T Bacon grease (if desired, this enhances the flavor)
    3/4 Cup Frozen Corn

    Directions
    Scramble eggs in frying pan if using bacon grease for flavor use it to scramble the eggs in. Add Veggies and Ham heat until warmed through. Add to rice, add just enough soy sauce to flavor.
    More soy sauce can be added if desired when served.

    Deviled Eggs

    Ingredients
    6 Hard Boiled Eggs
    1 tsp Salt
    1/4 Cup Mayonnaise
    Dash of Pepper
    1 tsp Vinegar
    1/8 tsp Worchestershire sauce
    Paprika and Parsley to garnish

    Directions
    Peel eggs, cut in half length wise. Slip out yolks; mash with fork, add rest of ingredients to mashed yolks and mix until well blended.
    Spoon into egg white halves. Sprinkle with paprika and parsley if desired.
